1 head of cabbage, shredded
3 carrots, shredded
1 red bell pepper, thinly sliced
1 kohlrabi, shredded
Optional: Hakurei turnips and radishes, grated

For the sauce:
1/2 cup olive oil
1/8 cup apple cider vinegar
1 shallot, minced
2 cloves garlic, minced or pressed or 4-6 garlic scapes, chopped
1 tsp dried or fresh dill
1 tsp tarragon
½ tsp cumin
Juice and zest of 1 lemon
2 dollops grainy mustard
1/4 cup maple syrup
2 dollops mayonnaise
Salt & pepper to taste

In a medium bowl, combine vegetables.  In a small bowl, combine sauce ingredients.  Toss the veggies in the sauce and serve!

Cooked Napa cabbage
From a fellow farmer in Sterling, Ontario 

Just cut into quarters, sprinkle with sea salt, pepper, drizzle with olive oil and roast in a hot oven. Also really nice if you again quarter it and toss the cabbage in a mixture of olive oil, balsamic, chopped garlic, salt and pepper and then griddle on the bbq, once charred cut into smaller chunks and add feta, mushrooms, and green onions.
