CSA Newsletter: Week #9 - Aug 21 & 22

Good evening members,

This week, you will receive:

We hope you've been enjoying the watermelons!  Your red watermelon this week will taste a little sweeter than the yellow and just as juicy!  Again, to our surprise, the honeydew melons are also ripe and delicious already.  Make a melon salad with feta cheese and veggies or eat your melons alone or chopped on yogurt with granola and honey.  Zucchinis and cucumbers are still around, as are beets.  If you have any interesting recipes for these vegetables, I'd love to have them posted on the website!  

I made a variation of Joséphine's simple ratatouille recipe for dinner on Friday and served it with salsa baked chicken strips, spinach tortillas, cheddar, tzatziki, sour cream, chopped boiled beets and chopped lettuce so everyone could make their own fajitas.  It was a delicious feast!  Roughly chop your vegetables (I used zucchini, onions, garlic, peppers and eggplant) then sauté in olive oil until slightly browned.  I spiced the veggies with a Mexican blend of cumin, paprika, oregano, and dried chipotle, along with salt and pepper.  Transfer to a baking dish, mix in chopped tomatoes, and bake until tender.  I roasted the chicken the previous night so it was simple to slice into strips, toss in a bean and corn salsa then bake until hot.

The tomatoes are still coming slowly, so we expect there will only be a couple for everyone or a small bag of cherry tomatoes.  There is still a lot of green fruit on those plants so they should ripen soon.  We checked on the winter squash today and it has another few weeks of ripening before we can hand them out but they're already a nice size.  And those darn beans!  They are taking their sweet time but should be ready for picking in the next couple of weeks.
